A Basque restaurant in the Marais district of Paris

In a simple and softly lit rustic interior, Jean-Guy Loustau serves up perhaps the best Basque dishes in the capital. (The Basque are a people from southern France/northern Spain known for their distinct dialect and excellent culinary skills.)

Consider starting with a piperade basquaise (a light terrine of eggs, tomatoes, and spices) before moving on to roast wild duck or rabbit in a red wine sauce.

The light, flavorful Basque wines are a perfect accompaniment.

Service is snappy, so you might want to save this place for a night when you don't want to linger over dinner.
